  • 2 cups rolled oats
  • 1 cup quick oats
  • 1/4 cup pecan pieces
  • 1 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1/3 cup coconut oil
  • 1/3 cup pure maple syrup
  • 2 tsp vanilla extract
  • 1/3 cup 100% real pumpkin puree (not pumpkin pie filling)

How to Make Pumpkin Spice Granola

Follow these simple steps to create a healthy pumpkin spice granola. 

  1. Preheat oven to 325°F and line a sheet pan with parchment paper.
  2. Stir together both types of oats, pecan pieces, pumpkin pie spice and cinnamon in a large bowl.
  3. In a sauce pot, melt coconut oil and then whisk in maple syrup, vanilla, and pumpkin puree.
  4. Pour wet ingredients over dry ingredients in a large mixing bowl and stir until everything is coated well and combined.
  5. Pour granola onto a prepared baking sheet and spread out in an even layer with the back of your spoon.
  6. Bake for 10 minutes then remove from oven and lightly toss granola on pan.
  7. Bake for an additional 5-10 minutes. More or less depending on how crunchy you like it. Do not let it burn!
  8. At the end of the baking time, remove from the oven and cool completely before storing. 
  9. Once the granola is at room temperature, give it a stir to break it up and scoop it into an airtight container.
