Homemade Pumpkin Spice Granola Recipe

Ingredients

  • 2 cups rolled oats
  • 1 cup quick oats
  • 1/4 cup pecan pieces
  • 1 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1/3 cup coconut oil
  • 1/3 cup pure maple syrup
  • 2 tsp vanilla extract
  • 1/3 cup 100% real pumpkin puree not pumpkin pie filling

Instructions

  • Preheat oven to 325°F and line a sheet pan with parchment paper.
  • Stir together both types of oats, pecan pieces, pumpkin pie spice and cinnamon in a large bowl.
  • In a sauce pot, melt coconut oil and then whisk in maple syrup, vanilla, and pumpkin puree.
  • Pour wet ingredients over dry ingredients in a large mixing bowl and stir until everything is coated well and combined.
  • Pour granola onto a prepared baking sheet and spread out in an even layer with the back of your spoon.
  • Bake for 10 minutes then remove from oven and lightly toss granola on pan.
  • Bake for an additional 5-10 minutes. More or less depending on how crunchy you like it. Do not let it burn!
  • At the end of the baking time, remove from the oven and cool completely before storing.
  • Once the granola is at room temperature, give it a stir to break it up and scoop it into an airtight container.
