How to Make Gingerbread Cake

One of my favorite things about this recipe is how approachable it is. You don’t need a lot of equipment or special skills—just a mixing bowl, a sturdy spatula, and a love for home-baked goodness. Here’s how to make it:

Prep Your Pan and Oven—Start by lining a 9×9-inch baking pan with parchment paper. This makes it easy to lift the cake out once it’s baked. Preheat your oven to 350°F so it’s ready when you are.

Cream the Butter and Sugar—In the bowl of a stand mixer (or with a hand mixer), beat (medium speed) room temperature butter with brown sugar for 3–4 minutes until light and fluffy. This step helps create that soft, tender texture.

Mix the Dry Ingredients—In a separate medium bowl, whisk together the all purpose flour, baking powder, salt, and all the warm, cozy spices—cinnamon, ginger, and cloves.

Add the Eggs and Molasses—To the creamed mixture, add the eggs one at a time, mixing well after each addition. Then pour in the molasses and vanilla extract, stirring until combined. The batter will start to take on a deep golden hue and smell like the holidays.

Alternate the Dry Ingredients and Sour Cream—Gradually add the flour mixture in parts, alternating with the sour cream to the wet ingredients. Start and end with the dry ingredients. This method keeps the batter smooth and prevents overmixing.

Bake to Perfection—Pour batter into your prepared pan and smooth the top. Bake for about 45 minutes or until a toothpick inserted into the center comes out clean. Your kitchen will smell absolutely divine during this part!

Cool and Finish—Let the cake cool in the cake pan for about 15 minutes before transferring it to a wire rack. Once completely cool, give it a generous dusting of powdered sugar.

How to Serve Gingerbread Coffee Cake

This cake is the ultimate cozy companion to your morning coffee or afternoon tea. It’s not overly sweet, which makes it perfect for breakfast or a light dessert.

  • With Hot Coffee or Chai â€“ The spices pair beautifully with a warm drink.
  • Alongside a Holiday Brunch â€“ It makes a charming addition to a spread of eggs, fruit, and breakfast meats, or add to the Christmas morning spread to make the perfect holiday breakfast this year!
  • As an Afternoon Pick-Me-Up â€“ Small individual slices with a cup of herbal tea is a peaceful way to recharge during the hustle of the season.
  • Topped with Whipped Cream or a Drizzle of Maple Syrup Glaze â€“ While it’s lovely on its own, you can dress it up if you’re feeling fancy–you can even add some vanilla ice cream if you want.

Baking Tips & Variations

This recipe is forgiving and versatile, but a few little tips can help you get the best results:

  • Room Temperature Ingredients â€“ Be sure your butter, eggs, and sour cream are at room temp before mixing. This helps everything blend smoothly and evenly.
  • Don’t Overmix â€“ Once you add the flour, mix just until everything is incorporated. Overmixing can lead to a tougher texture.
  • Use Quality Spices â€“ Fresh spices make a big difference in flavor. If yours have been sitting in the pantry for years, it might be time for a refresh.
  • Pan Size â€“ This recipe was developed for a 9×9 pan. If you use an 8×8 square pan, you may need to extend the bake time slightly.
  • Add a Streusel or Crumb Topping (Optional) â€“ If you want a little crunch, try sprinkling a simple brown sugar and cinnamon streusel on top before baking.  Yum!

Recipe FAQs

Can I make this cake ahead of time?

Absolutely! It keeps well for 2–3 days when stored in an airtight container at room temperature. You can also freeze it for up to 2 months. Just wrap it tightly and thaw overnight before serving.

Can I use Greek yogurt instead of sour cream?

Yes! Plain Greek yogurt works beautifully and provides the same tangy moisture as sour cream.

Does it taste like traditional gingerbread?

Yes, but in a lighter, cake-like form. It has all the classic spices and molasses flavor, but it’s softer and less dense than traditional gingerbread cookies.
