A Brief History of Processed Foods

Since the time of the Industrial Revolution, there have been significant changes in the foods Americans eat and how it’s prepared. Prior to the late 19th century, families raised their own livestock, grew their own produce, preserved food through methods like canning and fermentation, and meals were largely made from scratch. 

By the early 20th century, advancements in transportation, refrigeration, and factory production allowed foods to become more widely available, processed, and shelf-stable. This sounds great on the surface. Convenience was celebrated and as World War 2 approached, more women went to work and had less time to prepare meals at home. 

By the 1950s, fast food had emerged and there was an explosion of ultra-processed foods. Things like frozen dinners and snack foods changed eating habits even further and prioritized convenience over nutrition. 

By the late 20th century and early 21st century, health concerns like heart disease, diabetes, and obesity began to shed light on the impact of processed and fast foods. This is sparking a movement to get back to real, whole foods, and cooking from scratch. Today families face the challenge of balancing modern business with the desire to eat well.
