It’s that time of year again! Time for our kiddos to get back into the school year routines.
The back to school season makes for some very busy nights. Maybe you’ve been up since the crack of dawn rushing your kids around to get out the door. After a long day of school, there’s still no rest with sports and after-school activities to attend.
Sound familiar? Quite possibly the last thing you want to do on a busy school night is spend an hour or more making a meal for your entire family.
Even as a homeschool family, it’s tiring to get back into a rhythm that doesn’t feel exhausting. I find I have less time to get healthy meals on the table for my family and less of a desire for meal planning.

Sandwiches

Easy Clean Up
My goal with this collection of recipes is for you to spend less time in the kitchen and more time with your family so that means easy clean up. All 3 of these easy meals make clean up a cinch!
- Sheet Pan Fajitas- An absolute favorite sheet pan meal of mine. So easy to make and serve. Our family enjoys this meal with soft flour tortillas and black beans.

- Chicken Bake- An easy dinner recipe made from scratch! You can use chicken thighs or chicken breast but honestly, thighs are a little bit more affordable. Any potato will do but we prefer red or yukon gold for this meal.
- Chicken Alfredo Skillet is a hearty meal with a creamy sauce that you’ll want to make over and over. Bonus…you get to use your cast iron skillet from start to finish which just makes it look and feel extra special. P.S. Don’t skimp on the parmesan cheese!
Slow Cooker/ Crock Pot Meals
- Slow Cooker BBQ Chicken- This is truly a dump and go kind of meal. Sweet Baby Ray’s is the best bbq sauce to use in my opinion, but you can give it a little heat with a spicier sauce. To make it a little healthier, serve it on top of sweet potatoes instead of sandwich buns!
- Taco Potatoes- Or as our family affectionately calls them, taco-tatoes. I’m considering this a crockpot meal because did you know baked potatoes can be cooked in your crock pot?! I’m not kidding. Just wash them, poke a few holes, rub them with olive oil and salt, then wrap them in foil and place them in your crockpot on low for 5-6 hours. This is a great option for saving some time!
One Pot Meals
- Taco Chili- This chili is a family favorite even in the crazy hot days of summer. My husband and I jokingly say we’ll just turn down the AC before heading to the dinner table. I often serve it on top of a slice of cornbread with a dollop of sour cream. And it’s even yummier the next day!
- One Pot Pasta- Honestly, when I began making this years ago I was in disbelief that it was actually possible to cook everything together in the same pot. But now there are many one pot meals out there. This one is such an easy dinner on busy weeknights and it’s also cheap because it’s meatless unless you decide to add sausage.
Ground Beef Recipes
- Stove Top Lasagna Soup- A new spin on a classic comfort food. I love to get out my dutch oven and make a huge pot. The secret to the next level goodness is the mixture of flavorful sausage and ground beef. I typically serve this with a salad and a slice of toasted sourdough.
- Beef Enchiladas- This is such a simple recipe if you love a good mexican dish. Serve it as your main course with a side of chips and queso of course. Add it to your list of freezer meals as well!
- Skillet Burgers- Who doesn’t love a burger? The shredded onion smashed on top just makes a classic even better. It’s an easy weeknight meal for the whole family.
