Chocolate Chip Cookie Bites (Mini Freezer Cookies)

These chocolate chip cookie bites are the perfect make-ahead treat—soft, sweet, and freezer-friendly! Bake a few now and freeze the rest for quick, fresh cookies anytime you need a little something sweet.

Ingredients

  • ½ cup butter, softened
  • 1 egg, room temperature
  • 1 tsp vanilla
  • pinch of salt
  • pinch of cinnamon
  • ¼ cup brown sugar
  • ¼ cup sugar
  • cup flour
  • ½ tsp baking soda
  • pinch of baking powder
  • 1 cup chocolate chips

Instructions

  • Cream together butter, egg, vanilla, salt, cinnamon, and both sugars for 4-5 minutes using a stand mixer. 
  • In a small bowl, combine flour, baking soda, and a pinch of baking powder. Stir together. 
  • Add the dry ingredients into the wet and mix until well combined.
  • Fold in chocolate chips.
  • Roll into small balls and place on a parchment lined baking sheet.
  • Pop them in the freezer for an hour, then place them in a freezer safe bag.
  • Label the bag with these baking directions: Bake at 350° for about 12 minutes.

Notes

Note: If you’re baking freshly mixed cookie dough, cut baking time to 10 minutes.
