Banana Bread using Fresh Milled Flour

Ingredients

  • cup freshly milled soft white wheat
  • 1 cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ cup extra virgin olive oil
  • 1 tsp vanilla extract
  • 1 egg
  • 3 extra ripened bananas, mashed

Instructions

  • Preheat oven to 350°F and grease or line a 9x5 inch loaf pan. 
  • In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon. Make a well in the center and set it to the side. 
  • In another bowl, whisk together olive oil, vanilla, egg, and mashed bananas. Pour into the center of the dry ingredients and stir together until combined. 
  • Pour batter in prepared loaf pan and bake for 45-50 minutes until a toothpick comes out clean. Cool in the pan for 10 minutes and then transfer the banana loaf to a wire rack to continue cooling.
