Ingredients

  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter melted
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/3 cup sourdough discard or active starter
  • 2 bananas mashed
  • 1/3 cup sour cream

Instructions

  • Preheat oven to 360°F and butter a 9x5 inch loaf pan.
  • First, add flour, baking soda, and salt to a large mixing bowl and set the mixture aside.
  • Melt the butter and add it to a separate bowl along with the sugar. Stir it together.
  • Add the egg and vanilla.
  • Stir in the sourdough discard.
  • In a third bowl, mash two bananas and then fold the sour cream into the bananas.
  • Stir in the wet ingredients into the dry ingredients and fold in the mashed banana mixture.
  • *This is when you will add any mix-ins like chocolate chips if you choose.
  • Pour mixture into the prepared loaf pan and bake for 50 minutes to an hour until it’s golden brown. Insert a toothpick into the loaf and if it comes out clean it’s done.
  • Cool loaf in the pan for 10 minutes and then invert onto a cooling rack.
