Quick Fresh Milled Graham Crackers with Soft White Wheat

These quick fresh milled graham crackers made with soft white wheat are crisp, lightly sweet, and simple to make from scratch. A wholesome homemade snack using freshly ground flour.

Ingredients

  • cup sugar
  • ½ tsp salt
  • tsp baking powder
  • ½ tsp ground cinnamon
  • ½ cup butter (cold and cubbed)
  • 4 tbsp honey
  • 2 tsp vanilla
  • cup water, cold
  • cup fresh milled soft white wheat

Instructions

  • Preheat oven to 425°F and mill flour. 
  • Combine flour, sugar, salt, baking powder, and ground cinnamon in a large bowl and stir. 
  • Add cold cubed butter and incorporate into the flour mixture using a pastry blender. The mixture should resemble sand. 
  • Add honey, vanilla, and 3 tablespoons of water. Do not add all of the water yet. Stir until combined and then use your fingers to combine. 
  • If the mixture holds together well when pinched there's no need to add more water. If not, continue adding water 1 tablespoon at a time until the dough holds together when pinched. You're not looking for a sticky dough, but you do want it to hold together. 
  • Turn the dough out and knead it until dough is smooth. 
  • Divide, shape into 2 logs and wrap in plastic wrap. 
  • Chill for 20 minutes. 
  • Remove plastic wrap and place the dough in between 2 large sheet of parchment paper. Roll using a rolling pin a large rectangle forms and the dough is about 1/8th of an inch thick. 
  • Remove the top piece of parchment and using a pizza cutter, cut the dough into squares. Poke the squares using a fork to prevent puffiness and place the sheet of parchment paper on a baking sheet. 
  • Bake for 15-20 minutes
  • Remove and cool on a wire rack. Store airtight.
