How to Make Fresh Milled Buns for Burgers

Ingredients

  • cups water
  • cup avocado oil
  • cup honey
  • 2 tsp salt
  • 1 egg
  • 2 tbsp sunflower lecithin
  • cups 50/50 mix of hard red and hard white wheat flour
  • 1 tbsp instant yeast

Instructions

  • In the bowl of a stand mixer, combine water, oil, honey, salt, and egg. 
  • Add half of the flour and sunflower lecithin and then begin kneading with the dough hook attachment. Once combined, add yeast and the rest of the flour. 
  • Knead dough until it's smooth and elastic. This will proabaly take about 5-6 minutes. 
  • Cover the dough and let it rise until doubled. This takes about an hour. 
  • Divide the dough into 16 portions and shape into balls. Place the balls on a greased cookie sheet. 
  • Cover and allow them to rise for an an hour. 
  • Bake at 400°F for 10-12 minutes. 
  • Cool completely, slice, and serve.
