Ingredients

  • 2 cup freshly milled soft white wheat flour
  • 2 tsp salt
  • ¼ cup olive oil or melted butter
  • ¼ cup water + more as needed

Instructions

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.

Mix the Dough

  • Add the flour and salt to a food processor and pulse briefly to combine.
  • Pour in the olive oil (or melted butter) and water, then pulse until the mixture comes together into a soft dough. Add more water if the dough does not come together. 

Roll out the Dough

  • Place the dough between two sheets of parchment paper and roll it out very thin, about 1/8 inch thick.
  • The thinner the dough, the crispier the crackers will be.

Cut the Crackers

  • Remove the top sheet of parchment paper.
  • Use a pizza cutter to slice the dough into small squares or rectangles.
  • Use a fork to poke holes in each cracker to help them bake evenly.

Bake and Serve

  • Transfer the parchment with the cut dough onto a baking sheet.
  • Bake for 12–15 minutes, or until the crackers are lightly golden and crisp.
  • Let the crackers cool completely before breaking them apart along the cut lines. They will crisp up even more as they cool.
