Ingredients

  • 2 cups warm water
  • ¼ cup extra virgin olive oil
  • ¼ cup honey
  • 5 cups freshly milled flour (50/50 mix of hard red and hard white)
  • 1 tbsp yeast (heaping)
  • 2 tsp salt
  • tbsp sunflower lecithin 

Instructions

  • Mill your flour.  I love my Nutrimill.
  • Into the bowl of a stand mixer, add water, olive oil, honey, flour, yeast, salt, and sunflower lecithin. 
  • Mix on low speed using the dough hook attachment for 5-6 minutes until you have a cohesive dough that pulls away from the side of the bowl. 
  • Cover and allow your dough to rise for an hour. 
  • Once dough has risen to almost double, remove from the bowl and shape into 2 loaves. Place them into 2 loaf pans and cover again. 
  • Allow your loaves to rise for about 45 minutes while the oven preheats to 350°F. 
  • Once your loaves have risen to the tops of the pans, bake for 25 minutes. 
  • Allow them to cool for 5 minutes and then remove loaves from pans and cool completely on a wire rack before slicing or storing.
