Cinnamon Streusel Coffee Cake Made with Fresh Milled Flour

Ingredients
2cupsfreshly milled soft white wheat
1tbspbaking powder
½tspsalt
1cupmilk
½cupolive oil
¼cuphoney
Streusel Topping
1cupfresh milled flour
1cupbrown sugar
3tspground cinnamon
½cupbutter, melted
Instructions
Begin by milling about 1 1/2 cups of soft white wheat berries. This should give you enough flour for both the cake and topping.
Mix all of the ingredients for the streusel topping together in a medium sized bowl. Set aside.
Preheat oven to 350°F and prepare a 9x9 pan for baking.
In a large bowl combine 2 cups of freshly milled flour, baking powder, and salt.
Make a well in the center of the dry ingredients and add the milk, oil, and honey. Stir until combined.
Pour half of the batter into a 9x9 pan. Then add half of the streusel mix on top of the batter followed by the rest of the cake batter and top with the rest of the streusel topping.
Bake for 35-40 minutes or until the center is done. Use foil to tent the pan if you notice the top is getting too brown.
